Your photos appear to show that all four callipers need to be refurbished,
as the pads are definitely partially seized. I would be less concerned
about the hoses, but certainly no harm in replacing them at the same time.
However undoing the unions without damaging the hard brake lines will be a
challenge, as everything will be seized. The rears will most likely be
harder than the fronts.

If it were me I'd pack the callipers off to Loe Bank to have the machine
screws removed, you can then do the easy part of cleaning them up yourself.
There's probably no need to replace the stainless plates, but you could add
them to your parts list if you want.

Alternatively you could buy new callipers, I'm guessing that would be in
the region of £2k for all four including discs and pads.

I wouldn't want to have to rely on the brakes as they are in that condition.
