Replacing brake disc dust covers, greasing bearings etc

Hi All.

I have recently moved from London to Somerset  and am looking forward to
getting my 928 on the great roads down here.
Safety first! The brakes were getting pretty bad, so I am going to send the
calipers off for a refurb as the pads have been sticking due to corrosion
under the stainless plates and a couple of bleed nipples are stuck fast. I
am going to try BCS automotive, not sure if i am going to have the
functional rebuild or full rebuild with paint.
It's an opportunity to replace the front rusted dust shields, one is really
bad the other pretty bad. 'While I'm in there' I am going to give
everything a tidy up and re-grease the wheel bearings. Does anyone have
recommendations on which grease to use?

Are there any other jobs worth doing at the same time?

The pads that came out of the calipers have damping plates attached. What
are peoples thoughts on these? Should I bother replacing? Is it going to
squeal? Or can I refit them with the correct type of high temp double sided
tape?

I am planning to replace the discs with Pagid discs and pads.
