Additional info for any Thunderbird users. There isn't a setting to turn off
the prefix character in Thunderbird, but there is an extension that
overcomes this:

Subject: Off topic - a request to list users to turn off > prefix characters
Hi everyone,
I'm sure I'm not the only person who sometimes uses the 928UK list archive
to find information. However reading some email threads is made painful
because of the multiple > prefix characters on original messages and replies
earlier in the email threads.
So this is a quick request to ask you to turn off prefix characters for
email replies and forwards.
It's usually quick and easy to do. For example in Outlook go to Options>Mail
and scroll down to "Replies and Forwards", then turn off or remove the
prefix character. In gmail go to Settings>General and scroll down to
"Personal level indicators", then select "No indicators".
Thanks.
Best regards,
Jonathan
